The wind is just HOWLING here this morning! I think neither of us got much sleep last night.
The weather forecast for this week is calling for snow so I’m making a big pot of soup. This will fit the bill.
Ingredients
1 12 oz smoked sausage sliced diagonally
1 Tbsp olive oil
1/2 Tsp garlic powder
1/4 Tsp onion powder
1 Tbsp brown sugar
1 Tsp chicken bouillon granules
1 48 oz box of chicken broth
4 cups fresh kale (rinsed & torn into smaller pieces)
4 15 oz cans Great Northern beans
Hot sauce & black pepper to taste
Brown the sausage on medium high heat for about 6 minutes, then add the broth and bring to a boil. As the soup boils scrape the bottom of the pot to release all the brown bits. Next add all the spices & stir well to combine. Add the beans & kale.
Cover and bring back to a low boil for about 10 minutes. Add the hot sauce and black pepper to taste.
