It has been in the 60’s here in South Asheville all weekend & as much as I love snow I am really enjoying this Spring-like weather! I’ve done a few Spring projects, mixed up a Spring-inspired paint color & LOTS of Spring cleaning. All to be blogged about later.
For lunch today I made a BIG salad with spinach, fresh strawberries & grilled chicken breast. It makes enough for two people but you don’t have to advertise that!
Here are the ingredients:
2 cups (packed) baby spinach
1 cup chopped romain lettuce
6 large ripe strawberries
Mix together in a big pretty serving bowl
Then I add:
1/4 cup nuts (I prefer walnuts or almonds)
1/4 – 1/2 cup fried onion pieces
2 Tbsp shredded cheese ( Parmesan or blue)
One large boneless & skinless chicken breast, pounded to about 1/2 inch , grilled & sliced
You can season that chicken any way you like but I make a glaze to brush on before I grill it. I mix a tablespoon each
Honey, hot sauce & brown mustard. We LOVE it!
I really have a hard time finding good bottled salad dressing in the grocery store. Most of the time I make my own. The dressing that goes with this salad is very simple.
1/4 cup apple cider vinegar
1/4 cup canola oil
2 Tbsp brown mustard
1/4 tsp each
Salt, pepper, celery salt, garlic powder and onion powder
1 tsp sugar
I make in Mason jar so I can shake it up really well.
There you have it, a little taste of Spring!
