When you are raised in the South, you grow up on certain things. One of these things is cornbread. Traditional cornbread consists of yellow cornmeal, flour, egg, buttermilk & salt made in a cast iron frying pan in a HOT oven. In every church cookbook (my personal favorite) you will find multiple variations of this recipe, Special cornbread we will call them. Our personal favorite is Broccoli. We make this most often in Winter to accompany chili. This recipe satisfies my criteria for any dish: easy & yummy!
Here are the ingredients
1 – 10oz frozen chopped broccoli, thawed and drained
1 stick – butter, melted
1 tsp salt
1 8oz container, cottage cheese
4 Eggs
1 Box – Jiffy cornbread mix
1 – Medium diced onion
1 Cup, shredded sharp cheddar cheese
This is a batter bowl. It is one of my favorite & most used thing in my kitchen.
Mix all ingredients and pour into a greased 13” x 9” pan.
Bake at 400 degrees for about 40-45 minutes. When it begins to brown, it’s done! And this stuff smells amazing.
