We both love to cook. Since we both work pretty long hours we tend to cook only on the weekends and then reheat during the week. Works for us. Plus, we really like to spend as much time as we can together & at home. One of our favorite meals to cook is Sunday Lunch, especially during football season when it is referred to (around here) as Tailgate Sunday. Oh yea, we are all in. I gotta say this year though, I’m just glad it’s over. Our team’s season was a D-zaster!
This week I made something easy & yummy:
Stuffed Chicken
Here is the ingredient list
2 chicken breast, bone in & skin on
2 Tbsp lite cream cheese
2 Tbsp. Shredded Parmesan cheese
10 baby spinach leaves roughly chopped
2 roasted red pepper slices (from a jar) equaling about 1/2 a pepper, chopped
Salt, pepper, garlic powder to taste
Rinse chicken & pat dry
Mix the remaining ingredient well in a small bowl
Carefully loosen & pull back the skin on the chicken breast
Make a small slit in the thickest part of the breast on the top, not the side
Do not cut through the breast
Gently widen this little pocket with your fingers ( this will hold the cream cheese mixture)
Stuff each breast but do not over stuff then pull the skin back to cover
Season the chicken
In my oven it bakes for about 40 minutes at 400 degrees
